Eggplant Stew Recipe: Easy Delicious Vegetarian Dish

This eggplant stew recipe is created by my boyfriend. It’s so easy and very tasty. You will need eggplants, tomatoes, potatoes, sweet peppers, onions, carrots, garlic, tomato paste, olive oil, salt and spices you like.

Eggplant is a highly polarizing vegetable. You either love it or loathe it; there is no in-between. Whereas, a delicious vegetarian stew is an appetizing comfort food everyone enjoys.

Combine the two into an eggplant stew recipe with vegetables cooked in a rich Middle Eastern style and you get a delicious veggie stew you just can’t resist.

Some Useful Tips for Eggplant Stew Preparation

  • Make sure that the eggplant you buy is just ripe and neither too raw nor over-ripe and seedy to ensure a delicious vegetarian stew.
  • Use fresh vegetables for a healthy and tasty veggie stew.
  • When you chop the potatoes for the vegan stew, make sure that the thickness of the slices isn’t too much. Keep them around 3mm.
  • When you add the extra olive oil while cooking the eggplant veggie stew, make sure that it is a generous helping. This is because eggplant absorbs a lot of oil, so if you use less oil, the eggplant stew recipe will be too bland and not develop the Middle Eastern
  • The easiest way to remove the stalk of the sweet peppers for the vegan stew is to push the stalk inside to break it and then, pulling it out.

This eggplant stew recipe is created by my boyfriend. It’s so easy and very tasty. You will need eggplants, tomatoes, potatoes, sweet peppers, onions, carrots, garlic, tomato paste, olive oil, salt and spices you like.

INGREDIENTS

  • 1-2 eggplants, chopped
  • 2 onions, peeled and chopped
  • 2 carrots, peeled and grated
  • 5-10 sweet peppers, chopped
  • 2 potatoes, peeled and chopped into medium-sized pieces
  • 2-4 tomatoes, chopped
  • 4-5 large-sized cloves of garlic, peeled and chopped as finely as possible
  • 100% extra virgin olive oil
  • 5-2 tbsp (depending on how rich you want the dish to be) tomato paste, homemade or bought
  • 1 tsp salt
  • black pepper
  • spices as you like

DIRECTIONS

  • To start making this delicious vegetarian stew, add the olive oil to a pan and let it warm for 1-2 minutes.
  • Add the onions to the pan and let it cook in the oil. Stir it once after a while so that it does not burn.
  • Now add the carrots to the pan and mix the contents well. Cook for 7-8 minutes until they turn golden.
  • Next, add the potatoes to the pan.
  • Add the eggplant immediately to this (cut on slices in form of circles).
  • Stir the contents for a bit, add extra olive oil, stir a bit more, and then, cover the pan with its lid.
  • After this has cooked for some time to a rich golden color, add the sweet peppers, mix it in and cover with the lid again.
  • After it has cooked for a while, put the tomatoes in, stir, and cover.
  • Now that all the vegetables are cooked, add the garlic, some more olive oil, tomato paste, spices according to your taste, salt, and black pepper, and mix well.
  • Cover and let it further cook for 5-6 minutes. This completes the eggplant stew recipe.
