Sweet-Heat Dessert: Pineapples En Fuego!

I love grilling in the summer, though here in the desert in looks a little different. I fire up the barbie, throw on my grub, and dash back inside while I wait for flipping time.  Hey, you gotta do what you gotta do. Barbecuing doesn’t just keep my house cool, it really brings out flavors and textures you just don’t get using other (indoor) cooking methods. Take the pineapple for example- a few minutes over the fire gets those sugars caramelizing, making them oh-so-good on kabobs, in a rice bowl, on a burger… …or as a desert. Now I know what you’re thinking. Fruit for dessert doesn’t sound all that provocative…not until you add sriracha that is. This is a true no-recipe recipe. Simply grill up a few skewers of pineapple cubes over a BBQ for about 10 minutes. Once you’ve got a little char on them, squirt a few drops of sriracha over top. Voila- Pineapples En Fuego. The sweet-heat combo is amazing!  The perfect pairing is a little banana soft serve- not only is it lower in fat and calories than ice cream, it’s tropical harmony in a bowl.

Banana Soft Serve

Serves 2

  • 2 bananas, cut into thick slices
  • 1/4 cup plain non-dairy milk (optional)
  • 1/2 tsp vanilla extract (optional)

Freeze banana slices. Place into a food processor or blender and blend. If bananas are too hard, add non-dairy milk. If desired, at vanilla extract.

Top with Pineapples En Fuego and serve.
